It's the Frosting on the Cake


Stella (grandaughter) and Mya (great-neice) enjoyed this orange frosting last spring-they didn't really want the cupcakes underneath. They licked the frosting off these (and several other) cupcakes that day. Two year olds are just fabulous! 
Orange Frosting
1/4 cup butter (soft)
1 Tablespoon orange juice
1/2 teaspoon orange zest
1/4 teaspoon vanilla
pinch salt (less than 1/8 teaspoon)
powdered sugar 
Whip butter in a mixing bowl until fluffy. Add orange juice and zest, vanilla and salt. Mix well and then add in 2 cups powdered sugar. Add more powdered sugar until desired spreading consistency is reached.
Raspberry Frosting
1/4 cup butter
1/2 cup fresh raspberries
1 teaspoon vanilla
1/4 teaspoon salt
1 pound powdered sugar
1 1/2 tablespoon instant clear gel
Beat butter with an electric mixer until fluffy. Add raspberries and beat another minute. Stir in vanilla and salt. Add half the powdered sugar and continue beating. Stir the instant clear gel into the remaining powdered sugar and add to the frosting. Beat until thoroughly incorporated. The frosting will thicken a bit after you have finished beating it. Spread over cake or cupcakes.

Hints: Other fruits can be substituted for the orange and raspberry in these recipes, just watch the moisture content doesn't get too high or you will need too much sugar to reach spreading consistency. You can use the frosting for brownies or quick breads or cookies as well as cake or cupcakes. The instant clear gel is a modified corn starch and is available in baking stores or health food stores. I very seldom have cake flour around so I usually make boxed mixes for cakes because the type of flour used makes a big difference in the final texture.

The frosting on the cake in my life is thick and delicious! I really appreciate all that I have beyond the necessities and all the wonderful relationships with people that are important to me. Though we all have challenges, we should remember how fortunate we are in the grand scheme of things. May God continue to bless us all!

  2. Just Wednesday I heard Kourtney and Abbey both tell me that you were the first person to give their kids sugar. I think that's quite the accomplishment. I'm getting Bruno first, this time. And, I love what you said. We are so blessed to have such good people in our lives!
